Tasty Tuesday: Spiked Apple Cider

applesThe crisp morning in Central Ohio today was a firm reminder that we have indeed entered autumn. Leaves are slowly starting to change while days are beginning to get shorter. I enjoy this time of the year with football games, bonfires, sweaters, boots, and of course pumpkin and apple picking! And with apple picking comes apple cider. I made this spiked apple cider at a few gatherings last fall and it was enjoyed by all, and thought I would share it with you.

Ingredients:
1/4 gallon apple cider
1/2 cup dark rum
1/2 cup cinnamon schnapps
1 Granny Smith apple, peeled, cut into large chunks
1/2 lemon, juiced

Directions:
1. Mix together the cider, rum, and schnapps in a large pitcher.
2. Add the apples to a small bowl and toss them with the lemon juice.
3. Thread the diced apples onto skewers.
4. Pour the spiked cider into glasses filled with ice.
5. Garnish with an apple skewer and serve.

Central Ohio Homes are Selling!

The Columbus Board of REALTORS® has again confirmed what I’ve been experiencing this year – the Central Ohio real estate market is very strong. Yesterday, they released the August 2013 report, stating that record sales are in the books for this year.

According to the data they have collected so far this year:

  • As of August 31, 18,834 homes have sold (22.9% more than January 1- August 31, 2012 – exceed any previous year)
  • The number of homes sold in August alone (2,729) were 11.1% higher than August 2012, and the highest number sold in August

Chris Pedon, President of the Columbus Board of REALTORS® is quoted in the article:

“Although we’ve seen positive gains all year, home sales over the summer were off the charts. There was only one summer – back in 2005 at the height of the housing boom – when we came close to seeing the volume of homes sold this year.”

Tasty Tuesday: Apple Crisp

A taste of fall!

A favorite Central Ohio event is picking apples! A friend of mine has a few trees in his own backyard, and recently delivered several bags of apples to me. I started looking at various things to do with all of these apples, other than the traditional apple pie. Here’s a wonderful apple crisp that uses 10 cups of apples! This recipe makes quite a bit, filling a 9 x 13 pan.

Ingredients
10 cups all-purpose apples, peeled, cored and thinly sliced
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 cup water
1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup butter, melted

Directions:
1. Preheat oven to 350 degrees F (175 degree C).
2. Place the sliced apples in a 9×13 inch pan. Mix the white sugar, 1 Tbsp flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
3. Combine the oats, flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
4. Bake in preheated oven for about 40-45 minutes.

Marinades make the difference!

I love marinades. Just the right blend of flavors and spices can really make a meal go from good to outstanding. The other night, I had some friends over and some of them really enjoyed the marinade I had on my chicken, so I thought I would share the recipe with you here.

Ingredients:
6 cloves of garlic
1/2 red onion
juice of 1 lime
1 medium jalapeno
1 cut loosely packed cilantro leaves
3/4 cup corn oil
1 Tbsp honey

Directions:
Put all ingredients into a food processor and blend until smooth.
Pour over meat; let sit overnight.
Works well on both chicken and flank steak cooked on the grill. I like doubling the recipe and having extra for sauce for serving. Enjoy!

Tasty Tuesday: Sesame Ginger Tahini Sauce

This sauce will help you eat your veggies!

The summer heat is still on in Central Ohio, and the veggies are ripe and delicious! This recipe is for a mouth-watering tahini sauce that is good for you, and a great way to get your family to gobble up some of those vegetables. A friend of mine gave me a recipe similar to this one, but I’ve tweaked it to make it a little thicker and sweeter.

Ingredients:
1 cup water
1 cup raw tahini (use non-raw if you can’t find raw – it is usually in the “natural foods” section of the grocery store)
2 Tbsp fresh lemon juice
1 tsp white miso
1 Tbsp finely grated fresh ginger
6 dates, pitted
2 cloves garlic, pressed
pinch of hot pepper flakes

Directions:
Blend all ingredients together in a food processor or a high-powered blender. Add more water, if needed, to achieve the desired consistency.

Serve with steamed or water sauteed vegetables, or over rice. This sauce goes well with bok choy, asparagus, mushrooms, celery or kale. It also goes well over rice. Enjoy!

Easy nutrition on the go!

Central Ohio is abuzz with kids going back to school… Which, frankly, seems way too early, even though for a few days the weather has felt like the fall. In these first days and weeks of school, as families settle into their new schedules, there are often some rushed mornings. I thought I’d feature a recipe that may help on those mornings that seem too early, yet you know breakfast must be served!

Ingredients
3/4 cups pecans
1/2 cup natural almonds
4 cups old-fashioned rolled oats
1/4 cup sesame seeds (optional)
1 stick (8 tablespoons) unsalted butter
1/3 cup pure maple syrup, cane syrup or honey, at room temperature
1/4 teaspoon fine salt
3/4 cup chopped dates
1/2 cup dried blueberries or raisins

Directions:
1. Preheat the oven to 375°F. Line a large shallow baking sheet with foil.
2. Spread the pecans and almonds on the sheet and roast for 8 to 10 minutes, until lightly toasted. Transfer the nuts to a board, let cool and chop the nuts. Set aside.
3. Reduce the oven temperature to 300°F. Pour the oats and sesame seeds, if using, in a mound on the same baking sheet.
4. Melt the butter in a small bowl in the microwave; stir in the maple syrup and salt and drizzle on top of the oats.
5. Stir well with a rubber spatula and then spread out the oats in an even layer.
6. Bake the oats for 30 minutes, stirring once with the spatula halfway through, until the oats are lightly colored.
7. Let cool; the mixture will crisp as it cools.
8. Add the dates, blueberries, and reserved nuts and toss.
9. Enjoy – even on those rushed mornings! Store at room temperature in a glass jar for up to a month.

Tasty Tuesday: Poor Man’s Caviar

The Central Ohio air has cooled this past week, giving us a hint of fall. With the fall, I think of watching football games and having a nice set of appetizers to go with it. Usually among those appetizers is a dip (or two, sometimes three!). I like to include at least one healthy option, and this is a good one – plus it is easy to make and tastes delicious. This recipe serves 14-16 people, depending on how hungry everyone is.

Ingredients
4 large avocados (peeled, pitted, and chopped)
6 plum tomatoes, chopped
2 bunches of green onions, chopped
1/2 cup fresh cilantro, chopped
2 (14.5 ounce) can black beans, rinsed and thoroughly drained
2 (11 ounce) can Mexicorn, drained
1/2 cup red wine vinegar
1/2 cup canola oil
hot pepper sauce to taste

Directions:
Combine and mix avocados, tomatoes, green onions, cilantro, black beans, and Mexicorn. Stir in red wine vinegar, canola oil, and hot pepper sauce. Cover and chill at least an hour. Serve with tortilla or pita chips.
