The summer heat is still on in Central Ohio, and the veggies are ripe and delicious! This recipe is for a mouth-watering tahini sauce that is good for you, and a great way to get your family to gobble up some of those vegetables. A friend of mine gave me a recipe similar to this one, but I’ve tweaked it to make it a little thicker and sweeter.
1 cup water
1 cup raw tahini (use non-raw if you can’t find raw – it is usually in the “natural foods” section of the grocery store)
2 Tbsp fresh lemon juice
1 tsp white miso
1 Tbsp finely grated fresh ginger
6 dates, pitted
2 cloves garlic, pressed
pinch of hot pepper flakes
Blend all ingredients together in a food processor or a high-powered blender. Add more water, if needed, to achieve the desired consistency.
Serve with steamed or water sauteed vegetables, or over rice. This sauce goes well with bok choy, asparagus, mushrooms, celery or kale. It also goes well over rice. Enjoy!
