I was feeling a little chocolatey and found a wonderful and healthy blog with all things chocolate. I decided to try out some brownie batter pancakes… They are very easy to make and a nice treat for breakfast, not to mention healthy! I hope you try them. She has the recipe for 6-8 pancakes, but I doubled it to have more (and adjusted the below recipe as such).
1/2 cup spelt flour (or all-purpose or Bob’s gluten-free)
1/2 tsp baking powder
2 tbsp Hershey’s Special Dark cocoa or dutch cocoa (I didn’t have any, so I used regular cocoa)
3 packets nunaturals stevia or 2 tbsp plus 2 tsp sugar (you can use less if you’re planning to top with syrup and don’t want the actual pancakes to taste sweet)
1/8 tsp salt
3 tbsp applesauce or oil (I used coconut oil)
2 tsp pure vanilla extract
1/2 cup plus 3 tbsp milk of choice (I used unsweetened almond milk)
Combine the dry ingredients and mix well, then add the wet ingredients. Make your pancakes and enjoy!
If you want to add a “healthy” chocolate syrup, mix equal parts of cocoa powder (regular is fine) with coconut oil, then add agave nectar to taste. Yum!
