Be sweet on Valentine’s Day!

With Valentine’s Day around the corner, I thought you might like to have a couple sweet recipes to try out. One is a sweet poke cake (and on the not-so healthy side) while the other is a healthy strawberry smoothie. Why not make them both? They will even each other out, right?!

When I was in my 20’s and had a party, one of my girlfriends brought over a “Better Than Anything” cake. It was delicious!  I have been playing around with the recipe for years, incorporating various ingredients based on the occasion. For Valentine’s, I like to use red velvet cake, which is fabulous in its own right, but putting it into the better than anything formula it is out of this world!

Here’s what you’ll need to WOW your significant other (or just to WOW yourself, if you’d like!):

  • 9×13 Red Velvet Cake, baked and cooled (you can use a boxed cake if you’d like and bake according to the directions, or one from scratch is great, too)
  • 1 – can sweetened condensed milk (14.5 oz)
  • 1 cup International Delight French Vanilla creamer, divided
  • 1 – tub Vanilla Cool Whip Frosting (10.6 oz)
  • 1 – tub Cool Whip (8 oz)

And here’s what you do:
Poke around 20 holes evenly over the cake, using the opposite end of a wooden spoon.
Whisk together the sweetened condensed milk and 1/2 cup of the creamer, then pour the mixture evenly over the cake and holes.
Whisk together the rest of the creamer, the cool whip frosting, and the cool whip. Spread over top of the cake.
Chill 6+ hours (I prefer overnight).

The second recipe I wanted to share is called a strawberry Kefir smoothie. Heard of it? I enjoy finding ways to sneak in super-foods, and Kefir is one of them. I came across this recipe from the ingredients, inc. blog and you can find the post if you click here.

This recipe includes just four ingredients, but manages to pack in the fiber and probiotics while tasting like a dessert. It’s a way to feel like you are indulging without the guilt!

Here’s what you need for this simple recipe:
1 cup frozen strawberry Kefir (which you can find at Whole Foods- Lifeway brand)
1 cup fresh strawberries
1/2 cup almond milk
ice cubes

Blend the ingredients together and process until combined. Serve immediately and enjoy!
