It may be frigid outside, but the real estate market is hot! During these busy times, I like to have a day “off” from cooking by putting my crock pot to use. However, this recipe can also be cooked in the oven, if you prefer.
Ingredients:
2 lb frozen, shredded hashbrowns
3 c cooked ham, diced
1 c cheddar cheese, shredded
8 oz cream cheese
1/2 c diced onion (can be omitted if desired)
4 Tbsp butter or margarine
1 c milk
2 tsp chicken bouillon, dissolved in 3/4 cup boiling water
1 can cream of mushroom soup
1/2 tsp minced garlic
pepper to taste
Directions:
1) Put everything except the cream cheese and butter into the crock pot and mix well. Cut up cream cheese and butter into cubes, then dot over the of potatoes.
2) Cook on High for 2 hours, stirring periodically. Reduce heat to low and cook for 2 more hours. (You may also cook this in the oven at 325 for 1.5 hours.)
That’s it. All there’s left to do is enjoy the meal!
